Thirteen things on my desk today

1. Computer, Keyboard etc.
2. My bookstore mug
3. Pics of my husband and daughter
4. Flamingo Head bobber ( I love flamingos!)
5. Tin of Hint Mints
6. Stack of store bookmarks
7. Spike Action Figure (Buffy the Vampire Slayer character)
8. Skull Magic 8 ball thing from McD's (Pirates of the Caribbean toy)
9. Black lipstick (leftover from Halloween)
10. Mounds chocolate bar (my employee brought it for me today!)
11. Donald Duck pen from Disneyland
12. My collection of weird postcards
13. A Dolphin clip thing (it's supposed to hold pictures I think)

And of course stacks of paperwork that I'm always behind on!

INGREDIENTS:
• 2 cups pumpkin puree
• 1 (12 fluid ounce) can evaporated milk
• 4 eggs
• 1 1/2 cups white sugar
• 2 teaspoons pumpkin pie spice
• 1 teaspoon salt
• 1 (18.25 ounce) package yellow cake mix
• 1 cup chopped pecans
• 1 cup margarine, melted
• 1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan.
2. Combine the pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice and salt. Mix well and spread into the prepared pan.
3. Sprinkle the yellow cake mix over the top of the pumpkin mixture and pat down. Sprinkle the chopped pecans over the top of the cake mix then drizzle the melted margarine all over the top.
4. Bake at 350 degrees F (175 degrees C) for about 1 hour but no longer than 1 hour and 20 minutes. Top cooled cake with whipped topping when ready to serve.
